Ingredients (Makes 2 burgers)
- ½ lb (225g) ground beef (80/20 fat ratio recommended)
- 2 burger buns
- 2 slices of American cheese
- ½ small onion, finely diced (optional)
- 1 tbsp butter (for toasting buns)
- 1 tbsp neutral oil (vegetable or canola)
- Salt & pepper to taste
- Pickles (optional)
- Burger sauce (mayo, ketchup, mustard mix)
Instructions
1. Heat the pan:
- Preheat a cast-iron skillet or griddle over high heat for about 2 minutes until very hot.
2. Form loose beef balls:
- Divide the ground beef into two 4-ounce (113g) portions and loosely roll them into balls (don’t pack too tightly).
3. Smash the burgers:
- Place one beef ball onto the hot skillet.
- Use a spatula (with another spatula or towel for extra force) to smash the beef down as thin as possible (about ¼-inch thick).
- Season with salt and pepper.
- Let it cook without touching for 1.5–2 minutes until crispy and brown.
4. Flip and add cheese:
- Flip the burger and immediately place a slice of American cheese on top.
- Cook for another 30 seconds to 1 minute until the cheese melts.
5. Toast the buns:
- While the patties cook, toast the buns in butter in another pan or the same skillet until golden brown.
6. Assemble the burger:
- Spread burger sauce on the toasted buns.
- Add the cheesy burger patty.
- Top with onions, pickles, or any preferred toppings.
- Cover with the top bun and serve hot!
